Drink: My green goddess smoothie

At the weekend my eating patterns often get messed around especially when it comes to breakfast. I often exercise early on a Saturday, either with a Parkrun, a swim or a coached session and I've always struggled to eat very early in the morning so what i tend to do is have two breakfasts.

Pre-exercise, I'll have a banana and maybe an energy ball, then when I get home I have my green goddess smoothie.

Green goddess smoothie

I love this smoothie because it has everything I need to recover from my work out. The base of this smoothie is coconut water, which is super hydrating. It's basically nature's isotonic sports drink and it helps replace the water, potassium and salts I lose when I'm getting all sweaty.

I also add organic kale, which adds fibre and even more nutrients, as well as pineapple and mango. The fruits add more vitamins and make the smoothie taste great but they are also medium GI fruit. This means that I get an immediate boost from the coconut water combined with a longer, slower release of sugars from the fruit then the kale. This avoids any sugar crashes and leaves me feeling able to function for the rest of the day!

I use frozen pineapple and mango. I find it more convenient to have bags in the freezer to use as I need rather than have to deal with the mess and prep time of a whole fruit, but I also love that they chill the whole smoothie beautifully.

Last into the blender is coconut oil for the good fatty acids and it's ability to help build muscle, along with a squeeze of lime juice just because it makes it taste good.

The whole thing then gets blended. Then I drink it. And it tastes great - like some kind of tropical cocktail.

The Recipe

I use a glass tumbler that holds 300ml of liquid to measure out my smoothie.

Makes 2

1.5 cups coconut water

1 cup frozen mango

1 cup frozen pineapple

1 cup organic kale

1 heaped tsp coconut oil

1 tbsp lime juice (of juice of half a lime)

Blend until smooth.
